Hi Mike....You were writing a comment here and I was finishing a blog post. lol I have plans to make a large jar of hot peppers in brine -- not canned, just held in the brine for use during the fall season. So I am patiently waiting for most of the peppers to turn color before starting the jar. And so I wait..... Like you, I'd love to make some chipotles, too. We might have time during the long weekend to get a small grill-fire going outside, but it's not the first thing on the priority list if you know what I mean. I'm waiting for Serrano and Habanero peppers to start turning and so far, I've only gotten 4 red Habaneros, no Serranos. At least the Anchos are turning nicely now, but I also like them when they're that dark green, too. All of those jars I did bare-handed, no gloves. Ask me what it feels like to have your fingers ON FIRE for about 30 hours..... Yikes!!

Salsas compete at Okolona farm market

Scents of freshly cut peppers, onions and cilantro wafted outside Southern High School last week as judges sampled batches of homemade salsa in the first Okolona Farmers Market salsa contest. Yolanda Moore, community outreach coordinator for St. Rita Catholic Church, was one of three judges who rated 15 different recipes on categories such as appearance, aroma and flavor. "They're all so different, from mild to very hot," Moore said. "One even seemed to have a hint of cinnamon." Members of the Okolona Park Neighborhood Association started the farmers market in June 2009 at Okolona Elementary, and this year they moved it several blocks south on Preston Highway to the Southern High grounds. The market features vendors selling fresh fruit and vegetables from 4 to 7 p.m. every Tuesday through the end of October. The salsa contest is one way the neighborhood group has tried to attract more people, including live music, local crafts and submissions for an area cookbook. A homemade pumpkin pie contest is scheduled for the Oct. 12 market. On Aug. 24, more than 60 spectators and contestants watched as the judges' faces lit up with nearly every bite. Then everyone was invited to taste the salsas. Fiery habaneros were among several varieties of peppers in the winning salsa. Dale and Amy Deuser, who live in the Sunshine Acres neighborhood of Okolona, won a $35 gift card to Kroger and a basket full of kitchen utensils. Smaller prizes were given for second and third place. The Deusers wouldn't reveal their exact recipe, but they said it also includes fresh Roma tomatoes, onions and scallions -- all ingredients grown in their garden. "We love to make the salsa," said Dale Deuser, 55. Amy Deuser, a 52-year-old Southern High alumna, said they usually can and freeze their salsa, and give some away to neighbors and friends. But after seeing the farmers market for the first time, the couple said they may eventually open a booth to sell some to the public. Metro Councilwoman Madonna Flood, whose district includes much of Okolona, and market manager Carrie Elmore were the other salsa contest judges. Moore, whose mother is from Mexico, grew up in Texas and now works to bridge the language barrier for Hispanic people in the area, several hundred of whom regularly attend St. Rita. Moore said she was elated when Flood asked her to be a judge, but she initially thought she was asking her to judge a salsa dancing contest because the word "salsa" has two meanings. "When Madonna called me up, I thought 'How does she know I love to dance?'" Moore said, smiling. John and Debbie Henry, who live on Joyce Drive in Okolona, placed third in the contest for their recipe, which included tomatoes, garlic, onions and peppers. They read about the contest in The Courier-Journal and decided to give it a shot. Teamwork is the key to the Henrys' salsa. "He grows it and I do the canning," Debbie Henry said. Fred Osborne, who gardens at his house just north of Iroquois Park, was among those who came to watch the contest. While he likes spicy salsa, he said it's tough to taste the flavor if it's too hot. Nice post. We have been enjoyin quinoa for a few years now. It makes an awesome pilaf, we chop up and throw whatever we have in the way of vegetables into it, the secret is the heat and something sweet.
